Pinspiration: Chia Seed Pudding

If you haven’t joined Pinterest by now, you are missing out on life. Honestly. It is one of those things that I truly don’t know how I survived without it.

I love that I can find everything from style inspiration to cleaning tips to recipes.  I could spend hours pinning things!

Which brings me to last night— I was trying to get a grocery list together and one of things I want to try to make is chia pudding, so I got on Pinterest to look up recipes.

I’m doing a weight-loss program through my doctor’s office which is helping me eat gluten-free (and fairly dairy-free too). However, I have been struggling to find things I can eat for breakfast.

I’m not someone who gets up early and fixes myself a full breakfast.  I’m someone who needs to grab something out of the fridge and go because I slept until the last possible second so I only have just enough time to get ready and get out the door.  I’ve tried and tried to be better about this, but I’ve come to accept the fact that it’s probably never going to happen…

Anywho, I mentioned this to my doctor and she suggested I try chia pudding because  I can easily make it ahead of time and even put it in individual bowls so all I have to do is grab one and go.

So here I was perusing Pinterest looking for chia pudding recipes and my mouth was just watering…

Banana Peanut Butter Chia Seed Pudding

Dark Chocolate Coconut Chia Pudding

Coconut Chia Pudding with Mango + Mint

Pumpkin Pie Chia Pudding

Who knew there were so many chia pudding recipes?!

I think I’m going to try to make the Dark Chocolate one and the Banana Peanut Butter one (except I’ll substitute the regular milk for either coconut or almond milk and will probably use almond butter instead of peanut butter since that’s usually what I have in the house).

I’m saving that Pumpkin Pie Chia Pudding recipe to make this Fall.  I LOVE anything pumpkin flavored!

Which recipe sounds good to you?  I’ll try to follow-up with how they turned out.

P.S. I’ve pinned all of these recipes to my “Simply Gluten-Free” board.  You should check it out and feel free to follow me while you are there! ;-)

Spring… well, Summer… Cleaning

Today my hubby and I spent most of the day cleaning our house. We have a small townhome, so you’d think it wouldn’t take too long to clean, but we have been so busy the last few weeks it was way overdue. I REALLY hate cleaning so it took some time to get motivated but I am glad we started early so we could get it done and chill tonight. We had to clean and organize our spare bedroom as my sister is giving us some furniture, and the downstairs really needed a deep cleaning (including pulling the entire couch apart and vacuuming each cushion thanks to my dog’s shedding). That took almost an hour right there. But as much as I hate cleaning, I sure do enjoy the feeling of accomplishment afterwards and enjoying the benefits… kind of like exercising for me too lol! I really need to try one of these challenges: http://pinterest.com/pin/202873158186607231/ or http://pinterest.com/pin/202873158186032760/

I did discover today that you can put your plastic (clear) shower curtain liner in the washing machine with about a half-cup of bleach, and it gets rid of any mildew build-up.  Seriously, it looks brand new! I might be way behind on this, but I am glad I gave it a try because I would just go out and buy a new one rather than spend the time trying to clean it by hand.  Yes, I’m that lazy… don’t judge…

Also, have you seen this on Pinterest? We started using it a few months ago and it is an absolute life saver! It cuts through caked-on hairspray on my bathroom counter like nothing else. I also keep one of these in my shower: http://pinterest.com/pin/202873158186473925/.

Anyway, what have you been up to this weekend? Hopefully something way more exciting than cleaning!  But if you have been cleaning like me, what are some of your favorite tips/tricks?

Sunday Morning Breakfast

Last week, I signed up to bring breakfast for our Life Group (a.k.a. Sunday School class) at church.  Since I rarely cook (my husband is the cook in our house), I had no idea what I was going to fix.  Thank goodness for Pinterest!  I searched for “breakfast casseroles” and this recipe came up: Sunday Morning Breakfast Casserole. Coincidence?! I think not!  Especially since I could make it the night before and just throw it in the oven while getting ready the next morning.

My husband cooked the sausage for me.  He’s so sweet!

I found day old bread on sale at the grocery store for only $1!

Finished product! I think I used a few too many potatoes, but my Life Group class loved it! There was only a very small portion left, which the hubby finished off.

What are some of your favorite recipes? I would love to get some good ideas!
